Kissed my.....Scale!

Last night I jumped on the scale before my NIA dance class and let out a big "Woo- Hoo" in the waiting room of the center. The scale tells me I have lost 100 lbs. I get off the scale and do a little victory dance and the other 2 ladies in the room laugh and clap for me. I'm a nut for sure, but I can't tell you how happy it made me feel inside. 

I proceeded to NIA and loved last night's class. It was a first Monday of the Month which brings out everyone for a seminar credit. None of them want to actually exercise so they watch us regulars do it. It's like being on display at a strip club as we dance around, but thankfully we are all fully dressed. I feel like saying to these people " you are here at the center because you are a fatty...get up and move with us!" I can say "fatty" because I am also a fatty so that gives me the right I figure. Nope, they rather sit and watch. Someone should tell them they are not going to lose any pounds that way.

Over the last week or so I have been inspired by "Eggface" and have started tweaking some of my favorite recipes and trying out some new ones in a "healthier" way.  I made some delish English Toffee Chocolate Protein Ice Cream and then follow-ed that up with the Eggface Patty Melt Bites. I tried my hand at some homemade protein bars. They are not too bad, but cooking with Whey protein tends to make them a little dry. So I just spread some extra peanut butter over the top for that extra boost of protein.

I also did some regular baking this week but neglected to blog about my cookies. I made Cornmeal Heart Cookies. I admit I did eat one and I found them delish. They have very little sugar so I think that is why I was able to eat it. I sent a batch to one of my favorite families so I hope they love them. I will be baking some more at some point and I will blog about them.

This week will be filled with work and exercise! Tonight Weesa Bug is coming over to watch Glee with me. Tomorrow is my 6th month class, Thursday and Friday at the gym and then at some point I have to get my hunny a Valentines Day gift. Yup, busy busy!

I think tonight I might try another crustless mini quiche recipe....I have some leftover pork ribs. I am thinking if I combine those with some cheese, onion, eggs, and maybe a little green pepper or garlic that might be yummy!
